Butternut Squash Custard

Ingredients
1 medium sized
Butternut squash (peeled, seeded, & cubed)
1/2 cup
All-purpose flour
1/2 cup
Sugar
2 cups
2% milk
3 large
Eggs
2 tablespoons
Butter (melted)
1/8 teaspoon
Salt
1/8 teaspoon
Cinnamon
1/8 teaspoon
Nutmeg
Step by Step Instructions
- Put the squash cubes into a large saucepan and add enough water to cover. Bring to a boil then reduce the heat, cover, and let simmer for 8 to 10 minutes and drain off the water.
- Mash the squash in a large bowl with the flour and sugar, then once combined beat in the milk, eggs, and butter.
- Pour the batter into a 2 1/2 quart baking dish. Sprinkle the top with the salt, cinnamon, and nutmeg. Bake at 350 for 55 to 65 minutes.
